Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1 teaspoon caraway seeds
Wet Ingredients
- 1 egg
- 3/4 cup plain low fat Greek yogurt
- 1/4 cup low fat milk
- 1/4 cup butter melted
- 1/4 cup canola oil
Mix-Ins
- 3/4 cup golden raisins
- 1 tablespoon sugar for sprinkling
- caraway seeds for sprinkling
Instructions
Combine Dry Ingredients
- In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, salt, baking soda, and caraway seeds.
Combine Wet Ingredients
- In a separate bowl, beat the egg, yogurt, milk, butter, and oil.
Combine & Bake
- Slowly add dry ingredients to wet ingredients until moistened. Fold in the raisins.
- Fill a greased mini muffin tin 3/4 full of batter. Sprinkle with remaining sugar and caraway seeds.
- Bake at 400° for 15 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 5 minutes before removing from pan to wire rack. Serve warm or at room temperature.
