  • 12 Medjool dates large, pitted
  • 1/4 cup peanut butter
  • 1/4 cup roasted peanuts chopped
  • 3/4 cup chocolate chips
  • 1 tsp coconut oil
  • 1 pinch flaky sea salt optional

  • Line a baking tray with parchment paper. Spread the pitted dates open and lay them side by side to form a flat layer.
  • Spread peanut butter on the dates, then sprinkle chopped peanuts on top.
  • Combine chocolate chips and coconut oil in a microwave-safe bowl, heating in 15-20 second increments until melted.
  • Spread melted chocolate over the dates. Chill in the freezer for at least 30 minutes, then break into pieces.
