Ingredients
  

Cookie Base

  • 3 tablespoons salted butter softened
  • 1/2 cup sugar
  • 1 large egg yolk
  • 1 to 1.5 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1 1/4 cups almond flour blanched

Dough Ingredients

  • 1 cup butter softened
  • 1 cup sugar
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon almond extract
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 to 3/4 cup sliced almonds

Finishing Touch

  • 1 cup powdered sugar

Instructions
 

Prepare Ingredients

  • Cream together the softened butter and sugar until fluffy.
    3 tablespoons salted butter, 1/2 cup sugar
  • Add the egg yolk, almond extract, and vanilla extract, and mix well.
    1 large egg yolk, 1 to 1.5 teaspoons almond extract, 1 teaspoon vanilla extract
  • Gently fold in the almond flour.
    1 1/4 cups almond flour

Prepare Dough

  • In a separate bowl, cream together the softened butter, sugars, and eggs. Then add flour, baking soda, and salt.
    1 cup butter, 1 cup sugar, 3/4 cup brown sugar, 1 large egg, 1 large egg yolk, 1 teaspoon almond extract, 3 cups flour, 1/2 teaspoon baking soda
  • Mix the two mixtures until well combined, then chill the dough for 30 minutes.
  • Scoop, roll in almonds, and place on a baking sheet. Bake for 10-12 minutes.
  • Dust with powdered sugar once cooled.

Notes

Storing leftover cookies in an airtight container keeps them fresh for up to 5 days. Freezing works well; thaw before serving. For best flavor, enjoy within the first few days.
