  • 2 slices whole grain bread toasted
  • 1 large avocado ripe, mashed
  • 2 large eggs cooked to preference
  • 1 pinch salt to taste

Preparation

  • Toast the bread slices until golden brown, about 3-5 minutes.
  • In a bowl, scoop out and mash the avocado; season with salt.

  • Cook the eggs as desired—poached or fried works great.
    1 large avocado
  • Spread the avocado on the toast and top with the egg.
    2 slices whole grain bread, 1 large avocado

Notes

For best results, assemble just before serving to prevent the toast from getting soggy.
If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. The avocado may brown, but you can still enjoy the flavor.
