This baked zucchini recipe is crispy, cheesy, and loaded with garlic flavor. It’s an easy, beginner-friendly veggie side that’s baked to perfection.

Ingredients
  

  • 2 lbs zucchini (about 6 small or 4 medium), sliced into 1/2-inch thick rounds
  • 2 tbsp olive oil
  • 2 garlic cloves, finely minced (about 2 tsp)
  • 1 1/2 tsp Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup grated parmesan cheese
  • 2 tbsp finely chopped fresh parsley
  • Non-stick cooking spray for baking sheet
  • Aluminum foil optional, for easy cleanup

Instructions
 

  • Preheat oven to 350°F. Line a large baking sheet with foil and spray with non-stick spray.
  • In a small bowl, mix olive oil, garlic, Italian seasoning, salt, and pepper.
  • Add sliced zucchini to a large bowl and toss with the oil mixture until fully coated.
  • Spread zucchini on the baking sheet in a single layer and sprinkle with parmesan cheese.
  • Bake for 7–9 minutes until zucchini begins to soften.
  • Move rack closer to broiler and broil for 2–3 minutes until cheese is golden and bubbly.
  • Remove from oven, sprinkle with parsley, and serve warm.

Notes

For extra crunch, add a sprinkle of panko breadcrumbs before baking. To switch it up, try adding lemon zest before serving. This baked zucchini is best served immediately for optimal crispiness.
