For the Shrimp:
- 1 lb large or jumbo shrimp cleaned and deveined
- ¾ cup buttermilk
- ¼ cup all-purpose flour
- ¼ cup cornstarch
- 1 egg
- ½ tbsp garlic powder
- 1 tsp smoked paprika
- ½ tbsp hot sauce e.g., Frank’s
- ¼ tsp salt
- ¼ tsp black pepper
- 1 cup Panko breadcrumbs
- Oil for frying
For the Sauce:
- ¼ cup mayonnaise
- 2 tbsp sweet chili sauce e.g., Frank’s
- ½ tbsp hot sauce
- 1 tbsp honey
- Salt and pepper to taste
In a small bowl, mix mayo, sweet chili sauce, hot sauce, honey, salt, and pepper. Chill until ready.
In a medium bowl, mix flour, cornstarch, garlic powder, paprika, salt, and pepper. Add egg, buttermilk, and hot sauce. Whisk until smooth.
Toss shrimp in the batter and set aside to absorb the flavors.
Place Panko breadcrumbs in a shallow bowl. Coat each shrimp in breadcrumbs.
Heat oil in a skillet over medium-high. Fry shrimp 2 minutes per side until golden.
Transfer to a paper towel-lined plate to remove excess oil.
Drizzle with bang bang sauce and serve immediately.
For the crispiest Bang Bang Shrimp, fry in small batches and avoid overcrowding. For a lighter twist, bake or air fry the shrimp and serve in lettuce wraps.
