Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 15 oz can pumpkin puree
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tablespoon vanilla extract

Instructions
 

  • Preheat oven to 375°F. Grease a 9x5 loaf pan and line it with parchment paper.
  • In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  • In a large bowl, combine pumpkin puree, granulated sugar, and brown sugar. Beat in eggs, vegetable oil, and vanilla extract.
  • Slowly whisk in the dry ingredients until smooth.
  • Pour batter into the prepared pan and smooth the top with a spatula. Bake for 50-55 minutes, covering the top with foil at 30 minutes to prevent over-browning.
  • Let the bread cool in the pan for 10 minutes, then remove and slice.

Notes

Tip: Make sure not to overmix the batter to ensure a soft, fluffy loaf.
Variation: Add chocolate chips or nuts to the batter for extra texture and flavor.
