- 1 ¾ cups all-purpose flour
- 1 tablespoon pumpkin spice
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 15 oz can pumpkin puree
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 tablespoon vanilla extract
Preheat oven to 375°F. Grease a 9x5 loaf pan and line it with parchment paper.
In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
In a large bowl, combine pumpkin puree, granulated sugar, and brown sugar. Beat in eggs, vegetable oil, and vanilla extract.
Slowly whisk in the dry ingredients until smooth.
Pour batter into the prepared pan and smooth the top with a spatula. Bake for 50-55 minutes, covering the top with foil at 30 minutes to prevent over-browning.
Let the bread cool in the pan for 10 minutes, then remove and slice.
Tip: Make sure not to overmix the batter to ensure a soft, fluffy loaf.
Variation: Add chocolate chips or nuts to the batter for extra texture and flavor.
