Ingredients
  

For the Nests:

  • 2 cups semi-sweet chocolate chips
  • 3 cups chow mein noodles
  • ¼ cup peanut butter (or substitute with almond butter or cookie butter)
  • 2 tbsp unsalted butter
  • 1 package mini candy eggs (about 36-48 pieces)
  • ½ cup shredded coconut (optional, for added texture)

Instructions
 

Step 1: Prepare Your Workspace

  • Line a baking sheet with parchment paper or a silicone mat.
  • Gather your ingredients for easy access during preparation.
  • Set up a cooling station (a cooling rack works great).

Step 2: Melt the Chocolate

  • In a microwave-safe bowl, melt the chocolate chips in 20-30 second intervals, stirring after each until completely melted. Alternatively, use a double boiler.
  • Once melted, stir in the butter and peanut butter until smooth and fully combined.

Step 3: Add Chow Mein Noodles

  • Gently fold the chow mein noodles into the melted chocolate mixture, making sure all the noodles are coated without breaking them.

Step 4: Form the Nests

  • Using a small ice cream scoop or a tablespoon, scoop the chocolate-coated noodle mixture and drop it onto the lined baking sheet.
  • Gently press down in the center of each cookie with the back of a spoon to form the "nest" shape.

Step 5: Add Candy Eggs

  • Place 3-4 mini candy eggs into the center of each cookie while the nests are still slightly soft, pressing them gently into the chocolate.

Step 6: Allow to Set

  • Let the cookies set at room temperature for 20-30 minutes, or place them in the refrigerator for quicker setting.
  • Once fully set, transfer the cookies to a cooling rack.
