Ingredients
  

For the Bourbon-Maple Brisket:

  • 1 lb brisket
  • 1 cup bourbon
  • ½ cup maple syrup

For the Grilled Cheese Sandwiches:

  • 8 slices sourdough or brioche bread
  • 2 cups shredded cheddar cheese or mozzarella/Gouda mix
  • Butter, softened

For the Wafflewich Assembly:

  • 4 waffles store-bought or homemade

Instructions
 

  • Place brisket in a slow cooker. Pour in bourbon and maple syrup to coat evenly.
  • Cook on low for 8 hours until the brisket is fork-tender. Shred and set aside.
  • Butter one side of each bread slice. Heat a skillet over medium heat.
  • Layer cheese and shredded brisket between two bread slices, buttered sides out.
  • Cook each sandwich 2–3 minutes per side until golden and the cheese melts.
  • Toast waffles until crisp.
  • Place each grilled cheese sandwich between two waffles and press gently.
  • Serve warm, optionally drizzling reserved bourbon-maple sauce on top.

Notes

Tip: Use a panini press for extra crispy texture.
