Ingredients
  

Vegetables

  • 1 cup onion diced
  • 4 cups broccoli florets fresh or frozen

Dairy & Liquids

  • 2 cups vegetable broth low-sodium recommended
  • 1 cup heavy cream for a rich texture
  • 1.5 cups cheddar cheese shredded, sharp preferred

Instructions
 

Base Preparation

  • In a large pot, melt butter and sauté onions until translucent, about 3–4 minutes.

  • Add broccoli and vegetable broth. Simmer for 10-15 minutes until broccoli is tender.
  • Use an immersion blender to achieve desired consistency.
  • Stir in heavy cream and cheddar cheese until melted and smooth.

Notes

For a chunkier soup, reserve some broccoli before blending. Store leftovers in an airtight container for 3-4 days in the fridge.
