Ingredients
  

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks fresh or canned in juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • 1/2 tsp chili flakes optional
  • 2 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh cilantro, chopped for garnish

Instructions
 

  • Mix brown sugar, soy sauce, lime juice, olive oil, garlic, ginger, salt, pepper, and chili flakes (if using) in a bowl.
  • Add chicken to marinade, coat well, and refrigerate for 30 minutes.
  • For grilling: Preheat grill to medium-high, oil grates.
  • Grill chicken 6–8 minutes per side, basting with marinade; grill pineapple chunks 2–3 minutes.
  • For baking: Preheat oven to 375°F; place chicken and pineapple in a dish, pour marinade over, bake 30 minutes.
  • For slow cooking: Add chicken, pineapple, and marinade to slow cooker; cook on low 4–5 hours.
  • Ensure chicken reaches 165°F; garnish with cilantro and serve with rice or veggies.

Notes

Use fresh pineapple for a brighter flavor in your brown sugar pineapple chicken. For a spicy twist, double the chili flakes in the marinade for an extra kick.
