Preparation

  • Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  • Chop the cauliflower into bite-sized florets and toss them in olive oil and Buffalo sauce.
  • Spread the cauliflower evenly on the baking sheet and roast for 20-25 minutes, stirring halfway until golden.

Notes

These tacos can be made ahead of time. Store the roasted cauliflower separately from the tortillas to maintain crunch. Reheat the cauliflower in an oven for optimal texture.
