  • 1 cup cooked shrimp chopped
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • ½ cup diced onion
  • ½ cup diced bell pepper

Instructions

  • Preheat oven to 350 °F (175 °C).
  • In a mixing bowl, whisk together the eggs and milk until well combined.
  • Add crab, chopped shrimp, cheddar cheese, onion, bell pepper, salt, pepper, and paprika. Mix gently.
  • Prepare mini muffin tins: grease lightly and line with phyllo pastry squares or use mini pastry shells.
  • Fill each shell ¾ full with the seafood mixture.
  • Bake for 20–25 minutes, or until tops are golden and centers are set.
  • Let cool for 5 minutes before removing from the tin.

Notes

To avoid soggy bottoms, make sure seafood is well-drained before adding. For a twist, try swapping cheddar for pepper jack for a spicy kick. These Cheddar Crab and Shrimp Mini Quiches freeze well and reheat beautifully.
