Ingredients
  

  • 2 lbs. baby red potatoes washed and quartered
  • 1 lb. smoked sausage sliced into rounds
  • cups shredded cheddar cheese
  • 1 packet ranch seasoning mix about 1 oz.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley optional, for garnish
  • ½ cup sour cream optional, for serving
  • ¼ cup sliced green onions optional, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment for easy cleanup.
  • In a bowl, toss quartered potatoes with olive oil, garlic powder, paprika, ranch seasoning, and black pepper.
  • Spread potatoes in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway through.
  • Add sliced smoked sausage to the pan, toss gently with potatoes.
  • Top everything with shredded cheddar cheese.
  • Return to oven and bake 10–15 more minutes, until cheese melts and sausage browns.
  • Remove from oven, garnish with parsley or green onions if desired.
  • Serve warm with sour cream on the side, if using.

Notes

For best results, cut potatoes evenly so they roast at the same rate. You can swap cheddar for pepper jack to add a spicy twist to your Cheesy Ranch Potatoes and Smoked Sausage.
