- 2 large chicken breasts cut in half lengthwise
- 1/2 teaspoon garlic powder
- Salt & pepper to taste
- 1/4 cup all-purpose flour for dredging
- 1 tablespoon olive oil
- 2 tablespoons butter divided
- 3 cloves garlic minced
- 1/2 cup dry white wine
- 1/4 cup chicken broth
- 1/4 teaspoon Italian seasoning
- 1 cup heavy cream whipping cream
- 2 cups fresh baby spinach loosely packed
- 1/2 cup freshly grated Parmesan cheese
Slice chicken breasts in half lengthwise. Season both sides with garlic powder, salt, and pepper. Dredge in flour.
Heat olive oil and 1 tablespoon butter in a skillet over medium-high. Cook chicken 4–5 minutes per side until golden. Remove to a plate.
Add remaining butter and garlic to the skillet. Sauté for 30 seconds until fragrant.
