- 1 cup shredded cooked chicken
- 4 tbsp chipotle adobo sauce
- 2 tbsp ketchup
- 1 tbsp honey
- 1 tsp vinegar
- 1 cup shredded cheddar cheese low-fat, divided
- 1/2 cup mashed avocado about 1 large avocado
- 4 slices sourdough bread
- 4 –5 tbsp mayonnaise
- 1 tbsp olive oil or avocado oil
In a medium bowl, whisk chipotle adobo sauce, ketchup, honey, and vinegar until smooth.
Stir in shredded chicken and half the cheddar cheese until well coated.
Spread mayonnaise on one side of each bread slice (this side will face out). Place mayo-side down on a board, then spread mashed avocado on the other side.
Divide chicken mixture between two slices, sprinkle with remaining cheese, and top with the other slices, mayo-side up.
Heat a non-stick pan over low heat, drizzle with olive oil, and place sandwiches in the pan.
Cook for 3–4 minutes per side until golden brown and cheese is fully melted.
Serve warm and enjoy immediately.
Tip: Cook on low heat so the cheese melts without burning the bread.
