These cinnamon swirl pancakes are a perfect combination of fluffy pancakes and warm, comforting cinnamon. Easy to make and endlessly customizable, this recipe will elevate your breakfast to new heights. Whether you’re making them for yourself or a crowd, these pancakes are sure to be a hit!

Ingredients
  

Pancake Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar
  • 1 cup milk
  • 2 eggs
  • 3 tbsp melted butter
  • 1 tsp vanilla extract

Cinnamon Swirl Ingredients:

  • 1 tsp ground cinnamon
  • ¼ cup brown sugar
  • 3 tbsp melted butter

Instructions
 

Prepare the Cinnamon Swirl Filling:

  • In a small bowl, combine the melted butter, brown sugar, and ground cinnamon. Stir until smooth and set aside.

Mix the Pancake Batter:

  • In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, and sugar.
  • In another bowl, whisk the wet ingredients: milk, eggs, melted butter, and vanilla extract.
  • Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Lumps are okay!

Cook the Pancakes:

  • Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  • Pour about 1/4 cup of pancake batter onto the griddle.
  • As the pancake cooks, drizzle the cinnamon swirl mixture over the batter in a spiral pattern.
  • Use a toothpick or knife to swirl the cinnamon filling into the pancake.
  • Once bubbles form on the surface, flip the pancake and cook for another 1-2 minutes until golden brown.

Serve and Enjoy:

  • Stack the pancakes on a plate and drizzle with extra cinnamon swirl filling, syrup, or whipped cream if desired. Serve with fresh fruit or nuts for added texture and flavor.

Notes

  • Customize the Pancakes: Add fresh fruit like bananas or berries on top, or sprinkle with nuts for added crunch.
  • Make Ahead: You can prepare the pancakes ahead of time. Store them in an airtight container in the fridge for up to 3 days or freeze them for later use.
  • Fluffy Pancakes: Don’t overmix the batter—just stir until combined. Let the batter rest for a few minutes to help create fluffier pancakes.
