Servings 4people (or as many pancakes as you desire)
Ingredients
Pancake Ingredients:
1 ½cups all-purpose flour
1tbsp baking powder
½tsp salt
2tbsp sugar
1cupmilk
2eggs
3tbsp melted butter
1tsp vanilla extract
Cinnamon Swirl Ingredients:
1tsp ground cinnamon
¼cupbrown sugar
3tbsp melted butter
Instructions
Prepare the Cinnamon Swirl Filling:
In a small bowl, combine the melted butter, brown sugar, and ground cinnamon. Stir until smooth and set aside.
Mix the Pancake Batter:
In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, and sugar.
In another bowl, whisk the wet ingredients: milk, eggs, melted butter, and vanilla extract.
Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Lumps are okay!
Cook the Pancakes:
Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
Pour about 1/4 cup of pancake batter onto the griddle.
As the pancake cooks, drizzle the cinnamon swirl mixture over the batter in a spiral pattern.
Use a toothpick or knife to swirl the cinnamon filling into the pancake.
Once bubbles form on the surface, flip the pancake and cook for another 1-2 minutes until golden brown.
Serve and Enjoy:
Stack the pancakes on a plate and drizzle with extra cinnamon swirl filling, syrup, or whipped cream if desired. Serve with fresh fruit or nuts for added texture and flavor.
Notes
Customize the Pancakes: Add fresh fruit like bananas or berries on top, or sprinkle with nuts for added crunch.
Make Ahead: You can prepare the pancakes ahead of time. Store them in an airtight container in the fridge for up to 3 days or freeze them for later use.
Fluffy Pancakes: Don’t overmix the batter—just stir until combined. Let the batter rest for a few minutes to help create fluffier pancakes.
