Ingredients
  

Pasta

  • 8 ounces fettuccine noodles or pasta of choice

Sauce Base

  • 1 container low-fat cottage cheese 16-ounce, about 2 cups
  • 1/2 cup grated Parmesan cheese plus additional for serving
  • 1/2 cup milk I used 2%
  • 1 clove garlic roughly chopped, about 1 teaspoon
  • Kosher salt as needed
  • Chopped fresh parsley
  • Freshly ground black pepper

Instructions
 

Cook Pasta

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions and reserve 1 cup of the pasta cooking liquid before draining.

Make Sauce

  • In a blender, combine the cottage cheese, Parmesan, milk, and garlic. Blend until smooth.
  • Pour the cottage cheese sauce into a skillet, add the drained noodles, and gently toss over low heat. If necessary, thin with reserved pasta water.
  • Taste and adjust with salt. Serve topped with parsley and extra Parmesan.

Notes

This sauce is best enjoyed fresh but can be stored in the fridge for up to 3 days. When reheating, add a splash of milk to maintain creaminess.
