Ingredients
  

  • 1 cup cottage cheese
  • 3 large eggs separated
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup almond flour
  • 1 tablespoon melted butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Separate the eggs into two bowls—one for the whites and one for the yolks.
  • Mix the cottage cheese and egg yolks in a large bowl. Add the garlic powder, onion powder, salt, melted butter, almond flour, and baking powder. Stir until well combined.
  • In a separate bowl, whip the egg whites with cream of tartar until stiff peaks form.
  • Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate them.
  • Spoon the mixture onto the prepared baking sheet in 6-8 mounds.
  • Bake for 20-25 minutes or until golden brown and firm to the touch.
  • Let the cloud bread cool for a few minutes before serving.

Notes

For best results, use room temperature eggs to help whip the whites more easily. You can also experiment with adding herbs or cheese to the cloud bread mixture for extra flavor. For a gluten-free version, simply use almond flour as instructed.
