  • 0.5 cup low fat cottage cheese
  • 1 cup unsweetened almond milk plus more as needed
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons maple syrup
  • 1 cup gluten free old-fashioned oats
  • 1 tablespoon chia seeds
  • 1 cup fresh berries for topping
  • 0.25 cup sliced almonds for topping

Instructions
 

Preparing the Mixture

  • Add the cottage cheese, almond milk, vanilla extract, and maple syrup to a blender. Blend until smooth.

Combining Ingredients

  • Transfer the cottage cheese mixture to a mixing bowl and then fold in the oats and chia seeds. Stir until well combined.

Chilling

  • Separate the oats into two mason jars with lids and let the oats chill overnight.

Serving

  • After the oats have chilled, remove them from the fridge and give them a stir. Top with fresh berries before serving.

Notes

These Cottage Cheese Overnight Oats are flexible! Experiment with different toppings like nuts or bananas. Store them in the fridge for up to 5 days.
