Ingredients
  

Dressing:

  • 2 Tbsp olive oil
  • 1 fresh lime 2 Tbsp juice
  • 1/2 Tbsp balsamic vinegar
  • 1/2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp sugar

Salad:

  • 1 15 oz. can black beans, drained and rinsed
  • 1 15 oz. can black-eyed peas, drained and rinsed
  • 1 bell pepper (any color), diced
  • 2 Roma tomatoes, diced
  • 1 jalapeño, diced (optional for spice)
  • 1/4 red onion, diced
  • 1/4 bunch fresh cilantro, chopped

Instructions
 

  • In a small bowl, whisk together the olive oil, lime juice, balsamic vinegar, chili powder, cumin, salt, and sugar to make the dressing.
  • Rinse and drain the black beans and black-eyed peas, then add them to a large bowl.
  • Dice the bell pepper, tomatoes, jalapeño, and red onion. Chop the cilantro.
  • Add the diced vegetables and cilantro to the beans.
  • Pour the dressing over the salad, then stir until everything is evenly coated.
  • Serve immediately or refrigerate until ready to eat.

Notes

Cowboy caviar is perfect for a healthy snack or appetizer. For a spicier version, leave the jalapeño seeds in or add a dash of hot sauce. You can also mix in diced avocado for a creamy variation of this fresh dip.
