Dressing:
- 2 Tbsp olive oil
- 1 fresh lime 2 Tbsp juice
- 1/2 Tbsp balsamic vinegar
- 1/2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp sugar
Salad:
- 1 15 oz. can black beans, drained and rinsed
- 1 15 oz. can black-eyed peas, drained and rinsed
- 1 bell pepper (any color), diced
- 2 Roma tomatoes, diced
- 1 jalapeño, diced (optional for spice)
- 1/4 red onion, diced
- 1/4 bunch fresh cilantro, chopped
In a small bowl, whisk together the olive oil, lime juice, balsamic vinegar, chili powder, cumin, salt, and sugar to make the dressing.
Rinse and drain the black beans and black-eyed peas, then add them to a large bowl.
Dice the bell pepper, tomatoes, jalapeño, and red onion. Chop the cilantro.
Add the diced vegetables and cilantro to the beans.
Pour the dressing over the salad, then stir until everything is evenly coated.
Serve immediately or refrigerate until ready to eat.
Cowboy caviar is perfect for a healthy snack or appetizer. For a spicier version, leave the jalapeño seeds in or add a dash of hot sauce. You can also mix in diced avocado for a creamy variation of this fresh dip.
