Ingredients
  

  • 12 oz spaghetti
  • 1 tbsp olive oil
  • 4 slices pancetta, chopped
  • 1 lb medium shrimp, peeled and deveined
  • 3 egg yolks
  • 1 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tsp black pepper
  • ½ tsp salt
  • ½ cup reserved pasta water
  • Chopped parsley, for garnish (optional)

Instructions
 

  • Cook spaghetti in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.
  • In a large skillet, cook pancetta over medium heat until crisp. Remove and set aside.
  • Add olive oil and shrimp to the skillet. Cook 1–2 minutes per side until pink and opaque. Remove shrimp.
  • In a bowl, whisk together egg yolks, Parmesan, pepper, and salt.
  • Add drained pasta to the skillet off heat. Quickly toss with the egg mixture.
  • Stir in shrimp and pancetta. Add reserved pasta water gradually until creamy.
  • Top with parsley and extra cheese, if desired. Serve warm.

Notes

Tip: Keep the pan off heat when mixing the egg sauce to avoid scrambling.
Variation: Swap bacon for pancetta for a more traditional carbonara twist. Shrimp Carbonara is perfect for experimenting!
