Crust
- 1 17.5 oz pouch sugar cookie mix
- 1 3.5 oz box instant French vanilla pudding mix
- ½ cup unsalted butter melted
- 1 large egg
- 2 tbsp light brown sugar
- 2 tsp vanilla extract
Filling
- Two 8 oz blocks cream cheese very soft
- 1 large egg
- 3 large egg yolks
- ½ cup sour cream
- ½ cup granulated sugar
- 2 tsp vanilla extract
- ½ cup toffee bits
Preheat oven to 350°F. Line a 9×13-inch pan with foil and spray with cooking spray.
In a large bowl, mix all crust ingredients until a thick dough forms. Press evenly into the bottom of the pan.
Wipe out the bowl, then beat cream cheese, egg, yolks, sour cream, sugar, and vanilla until smooth.
Pour filling over the crust and spread evenly.
Bake for 40–45 minutes, or until the center is set. Start checking at 30 minutes.
Sprinkle toffee bits over the hot bars immediately after baking.
Cool at room temp for 30 minutes, then refrigerate for at least 3 hours.
