- 2 lbs potatoes, sliced into ½-inch thick pieces
- 1 large onion, cut into wedges
- ¼ cup canola oil
- ¼ cup olive oil
- 4 garlic cloves, minced
- 1 packet onion soup mix
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine sliced potatoes and onion wedges.
Pour in canola and olive oil, then toss to coat evenly.
Add minced garlic and onion soup mix; stir to mix thoroughly.
