Ingredients
  

  • 2 lbs beef stew meat or chuck roast, cubed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 ½ cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 2 tbsp cornstarch
  • 3 tbsp cold water
  • 12 oz egg noodles, cooked separately
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Optional: Sear beef cubes in olive oil in a skillet over medium-high heat for extra flavor.
  • Transfer beef to crockpot. Add onions, garlic, Worcestershire sauce, and beef broth.
  • Season with salt, pepper, and thyme. Stir gently to combine.
  • Cover and cook on low for 6–8 hours or high for 4–5 hours until beef is tender.
  • Mix cornstarch and cold water into a slurry. Add to crockpot during the last 30 minutes.
  • Cook egg noodles separately according to package instructions.
  • Serve beef tips and gravy over noodles.
  • Garnish with chopped parsley and enjoy!

Notes
