- 2 lbs beef stew meat or chuck roast, cubed
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 ½ cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- 2 tbsp cornstarch
- 3 tbsp cold water
- 12 oz egg noodles, cooked separately
- Fresh parsley, chopped (for garnish)
Optional: Sear beef cubes in olive oil in a skillet over medium-high heat for extra flavor.
Transfer beef to crockpot. Add onions, garlic, Worcestershire sauce, and beef broth.
Season with salt, pepper, and thyme. Stir gently to combine.

Mix cornstarch and cold water into a slurry. Add to crockpot during the last 30 minutes.
Cook egg noodles separately according to package instructions.
