This Crockpot Fiesta Chicken is a Tex-Mex favorite made with tender chicken, beans, corn, salsa, and creamy cheese. Perfect for busy nights, it’s a dump-and-go recipe you can make in a slow cooker or Instant Pot. Serve in tacos, bowls, or over rice for a crowd-pleasing dinner everyone will love.

- 1.5 lbs boneless skinless chicken breasts
- 4 oz cream cheese cubed
- 8 oz salsa mild, medium, or hot
- 1 cup frozen corn
- 1 can 15 oz black beans, drained and rinsed
- 1 packet taco seasoning about 2–3 tbsp
Place chicken, cream cheese, salsa, corn, black beans, and taco seasoning into your crockpot.
Cover and cook on high for 4 hours or low for 6 hours.
Once cooked, shred chicken using a hand mixer directly in the crockpot or with two forks on a cutting board.
Stir to combine all ingredients until creamy.
Serve immediately in tacos, burrito bowls, over rice, or with chips.
For a lighter version of Crockpot Fiesta Chicken, use low-fat cream cheese and skip the cheese topping. You can also swap salsa for Rotel tomatoes for a chunkier, spicier twist.
