- 3 –4 large sweet onions sliced
- 4 tbsp salted butter
- 1 tbsp olive oil
- 1 tsp sea salt
- 1 tsp coarse black pepper
- 1 tsp granulated sugar
- 1 lb ground beef
- 1 cup Italian herb breadcrumbs
- 1 cup milk
- 1 egg
- 1 oz packet French onion soup mix
- ½ cup cooking sherry
- ½ tsp Worcestershire sauce
- 4 oz Swiss Gruyère or provolone cheese sliced
- Fresh thyme sprigs for garnish
Slice onions and place them in a 6-quart slow cooker. Top with butter, olive oil, salt, pepper, and sugar.
Set crockpot to LOW and cook onions for 9 hours (or caramelize in a skillet for 15–20 minutes).
In a bowl, mix ground beef, breadcrumbs, milk, egg, and soup mix. Shape into a loaf.
Pour sherry and Worcestershire over onions in the slow cooker.
Place meatloaf on top of the onions. Cook on HIGH for 3 hours, until internal temp reaches 160°F.
Add cheese slices on top. Cover and cook 20–30 minutes until melted.
Serve with onions and juices from the cooker. Garnish with thyme.
