Ingredients
  

Base:

  • 4 croissants day-old, torn into chunks
  • 6 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Fillings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon or sausage crumbled
  • 1/2 cup chopped spinach optional
  • 1/4 cup chopped green onions
  • 1/2 cup diced mushrooms optional

Topping:

  • 1/4 cup grated Parmesan
  • Pinch of red pepper flakes optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  • Layer torn croissants in the dish evenly.
  • In a bowl, whisk eggs, milk, cream, salt, and pepper until smooth.
  • Sprinkle cheese, meat, veggies, and onions over the croissants.
  • Pour egg mixture evenly on top, pressing gently to soak.
  • Add Parmesan and red pepper flakes as topping.
  • Cover with foil and bake for 30 minutes.
  • Uncover and bake 10–15 minutes more, until golden and set.

Notes

For the best texture, use slightly stale croissants to absorb the custard. To make it vegetarian, skip the meat and add extra mushrooms or roasted peppers. The croissant breakfast pie can be made ahead for stress-free mornings.
