- 2 cups cherry tomatoes, halved
- 2 cups cucumber, sliced
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp dried oregano
- 1/4 cup chopped fresh parsley or basil
- Optional: 1/4 cup crumbled feta cheese
Slice cucumbers and halve the cherry tomatoes. Add to a mixing bowl.
Thinly slice the red onion and add to the bowl.
In a small bowl, whisk olive oil, lemon juice, salt, pepper, and oregano.
Pour the dressing over the vegetables.
