- 1 cup granulated sugar 200g
- 1/2 cup butter 113g
- 2 large eggs
- 3 ripe bananas, mashed (about 1½ cups)
- 1 tablespoon milk
- 1 teaspoon ground cinnamon
- 2 cups all-purpose flour 250g
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- Optional: 1 cup chopped nuts or chocolate chips
- Butter or nonstick spray for greasing
- Parchment paper for lining the pan
Preheat oven to 350°F (180°C). Grease a loaf pan and line the bottom with parchment paper.
In a large bowl, cream the sugar and butter until light and fluffy.
Add eggs one at a time, mixing well after each addition.
Stir in mashed bananas and milk until well combined.
In a separate bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
Add dry ingredients to the wet mixture and stir gently until just combined.
Fold in chopped nuts or chocolate chips, if using.
Pour the batter into the prepared loaf pan. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
For extra flavor, use overripe bananas with dark spots. This banana bread recipe also works great with a swirl of Nutella or a sprinkle of coarse sugar on top.
