Ingredients
  

  • 1 cup granulated sugar 200g
  • 1/2 cup butter 113g
  • 2 large eggs
  • 3 ripe bananas, mashed (about 1½ cups)
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour 250g
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Optional: 1 cup chopped nuts or chocolate chips
  • Butter or nonstick spray for greasing
  • Parchment paper for lining the pan

Instructions
 

  • Preheat oven to 350°F (180°C). Grease a loaf pan and line the bottom with parchment paper.
  • In a large bowl, cream the sugar and butter until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in mashed bananas and milk until well combined.
  • In a separate bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
  • Add dry ingredients to the wet mixture and stir gently until just combined.
  • Fold in chopped nuts or chocolate chips, if using.
  • Pour the batter into the prepared loaf pan. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, use overripe bananas with dark spots. This banana bread recipe also works great with a swirl of Nutella or a sprinkle of coarse sugar on top.
