  • 6 large eggs
  • 1/2 cup low-fat cottage cheese
  • 1 teaspoon chopped Calabrian chili peppers
  • 1/2 tablespoon avocado oil

Vegetables & Sausage

  • 1/2 pound ground breakfast sausage
  • 1/4 cup diced yellow onion
  • 1/4 cup diced red bell pepper
  • 1 clove garlic, minced
  • 2 scallions, thinly sliced

Crust & Topping

  • 1 deep dish 9 inch pie crust
  • 1/2 cup shredded cheddar cheese

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a blender, combine eggs, cottage cheese, chopped Calabrian chili, salt, and pepper. Blend until smooth.

Cooking

  • Heat a skillet over medium-high heat. Add avocado oil and sausage. Brown the sausage, then add onion, bell pepper, and garlic. Sauté for 3-5 minutes until tender.

  • Layer the sausage mixture into the pie crust, top with cheddar cheese, and pour the egg mixture over everything.
  • Bake for 20-25 minutes until the crust is golden brown and the egg is set.
