  • 6 large eggs
  • 1/2 cup low-fat cottage cheese

Meat & Vegetables

  • 1/2 pound ground breakfast sausage
  • 1/4 cup diced yellow onion
  • 1/4 cup diced red bell pepper
  • 1 clove garlic minced
  • 2 scallions scallions thinly sliced

Spices & Oils

  • 1 teaspoon chopped Calabrian chili peppers
  • 1/2 tablespoon avocado oil
  • 1 to taste salt
  • 1 to taste pepper

Other

  • 1 deep dish 9 inch pie crust
  • 1/2 cup shredded cheddar cheese

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a blender, combine the eggs, cottage cheese, chopped Calabrian chili peppers, salt, and pepper until smooth.

Cooking

  • Heat a skillet over medium-high heat. Add avocado oil and brown the sausage, breaking it up as it cooks.
  • Once the sausage is browned, add onion, bell pepper, and garlic, sautéing until tender.
  • Pour the sausage mixture into the pie crust, top with cheddar cheese, and then pour the egg mixture over it. Bake for 20-25 minutes.
  • Let the quiche sit for 10 minutes before slicing.
