Ingredients

For the Spicy Chicken:

  • 2 Boneless, skinless chicken breasts
  • 1 cup Buttermilk
  • 2 tbsp Hot sauce
  • 1 cup All-purpose flour
  • ¼ cup Cornstarch
  • 1 tbsp Paprika
  • 1-2 tbsp Cayenne pepper (adjust to taste)
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tsp Salt
  • ½ tsp Black pepper
  • Vegetable oil For frying

For the Sandwich Assembly:

  • 4 Brioche buns
  • ¼ cup Mayonnaise
  • 8-12 Pickle slices
  • 4 Lettuce leaves

Instructions

Marinate the Chicken:

  • In a large bowl, whisk together buttermilk and hot sauce.
  • Add chicken breasts, ensuring they're fully coated.
  • Cover and refrigerate for at least 1 hour (or overnight for maximum flavor).

Prepare the Spicy Coating:

  • In a shallow dish, mix flour, cornstarch, and all spices.
  • Taste the dry mix and adjust seasonings if needed.

Coat and Fry the Chicken:

  • Remove chicken from marinade, letting excess drip off.
  • Dredge each piece in the spicy flour mixture, coating evenly.
  • Heat oil in a large skillet over medium-high heat.
  • Fry chicken for 5-7 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  • Drain on paper towels.

Assemble Your Spicy Chicken Sandwich:

  • Toast brioche buns if desired.
  • Spread mayonnaise on both halves of each bun.
  • Place a lettuce leaf on the bottom bun.
  • Add the spicy fried chicken breast.
  • Top with pickle slices and the upper bun.

Notes

  • Adjusting Spice Level: If you prefer a milder sandwich, reduce the amount of cayenne pepper and hot sauce in the recipe.
  • Double-Dip for Extra Crunch: For an even crispier sandwich, you can dip the chicken in the buttermilk and breading twice before frying.
  • Make Ahead: You can prepare the breaded chicken ahead of time and refrigerate it until you're ready to fry. This can save you time when you're ready to assemble the sandwiches.
  • Healthier Version: To make this recipe healthier, use an air fryer or bake the chicken instead of frying it. For baking, preheat your oven to 400°F and bake the chicken for about 20 minutes, flipping halfway through.
