Ingredients
  

  • 6 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup cottage cheese
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup spinach, chopped
  • 1/4 cup bell peppers, diced
  • 2 tbsp green onions, sliced
  • 2 tbsp fresh herbs, chives, basil, or dill

Instructions
 

  • Preheat oven to 325°F and lightly grease a 12-cup muffin tin or silicone egg bite mold.
  • In a blender, combine eggs, heavy cream, cottage cheese, salt, and pepper. Blend on low for 20 seconds until smooth but not frothy.
  • Gently stir in shredded cheese and your choice of mix-ins by hand.
  • Pour the egg bites recipe mixture into your prepared muffin cups, filling each about 3/4 full.
  • Place the muffin tin in a larger baking dish and add hot water to create a water bath, reaching halfway up the sides of the muffin tin.
  • Bake for 25-30 minutes until centers are just set but still slightly jiggly.
  • Cool in the tin for 5 minutes before gently removing with a spoon or small spatula.

Notes

For the creamiest egg bites recipe, don't skip the water bath! It creates gentle steam that helps them cook evenly. Try Mediterranean-style with feta, spinach, and sun-dried tomatoes, or go Southwest with pepper jack cheese, bell peppers, and a pinch of cumin.
