Dry Ingredients
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 2 tbsp sugar
- ½ tsp cinnamon
Wet Ingredients
- 2 large eggs
- ⅓ cup milk
- 1 tbsp melted butter
Fruits & Finishing
- 1¼ cups diced fresh peaches about 2 peaches
- Oil for frying
- Granulated sugar for coating optional
Optional Glaze
- 1 cup powdered sugar
- Milk enough for drizzling consistency
In a bowl, whisk together flour, salt, baking powder, sugar, and cinnamon.
In another bowl, whisk eggs, milk, and melted butter until smooth.
Pour wet mixture into dry ingredients and stir just until combined.
Fold in diced peaches gently.
Heat oil in a fryer or heavy pan to 375°F (190°C).
Ladle ¼ to ½ cup batter into oil; fritter will rise after sinking.
Fry 2–3 minutes per side until golden brown.
Drain on paper towels and roll in sugar or drizzle with glaze.
