Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 tbsp sugar
  • ½ tsp cinnamon

Wet Ingredients

  • 2 large eggs
  • cup milk
  • 1 tbsp melted butter

Fruits & Finishing

  • cups diced fresh peaches about 2 peaches
  • Oil for frying
  • Granulated sugar for coating optional

Optional Glaze

  • 1 cup powdered sugar
  • Milk enough for drizzling consistency

Instructions
 

  • In a bowl, whisk together flour, salt, baking powder, sugar, and cinnamon.
  • In another bowl, whisk eggs, milk, and melted butter until smooth.
  • Pour wet mixture into dry ingredients and stir just until combined.
  • Fold in diced peaches gently.
  • Heat oil in a fryer or heavy pan to 375°F (190°C).
  • Ladle ¼ to ½ cup batter into oil; fritter will rise after sinking.
  • Fry 2–3 minutes per side until golden brown.
  • Drain on paper towels and roll in sugar or drizzle with glaze.

Notes

For best flavor, use slightly overripe peaches. Want a twist? Try adding chopped pecans to the batter for crunch and nuttiness. These fresh peach fritters are perfect for summer brunches!
