Ingredients
  

  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Vegetable oil for frying (enough to fill skillet 3/4 inch deep)
  • Confectioners’ sugar for dusting

Instructions
 

  • In a large mixing bowl, beat the eggs until foamy.
  • Add milk and vanilla extract; whisk to combine.
  • Stir in flour, sugar, baking powder, and salt until the batter is smooth.
  • Heat about 3/4 inch of oil in a deep skillet to 375°F.
  • Using a small cookie scoop, drop spoonfuls of batter into the hot oil.
  • Fry until golden brown, flipping once to cook evenly on both sides.
  • Remove and drain on paper towels.
  • Dust funnel cake bites with confectioners’ sugar while still warm and serve immediately.

Notes

For crispier funnel cake bites, don’t overcrowd the pan. For a fun twist, try coating them with cinnamon sugar instead of powdered sugar.
