This garlic butter lettuce tomato and grilled chicken sandwich is a flavor-packed, easy-to-make meal perfect for any time of day. It’s beginner-friendly and filled with juicy grilled chicken, crisp veggies, and buttery toasted bread.

Ingredients
  

  • 8 slices thick-cut bread Texas toast or sourdough
  • 1/2 cup unsalted butter softened
  • 2 –3 cloves garlic finely minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp red pepper flakes optional
  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 –2 large ripe tomatoes sliced
  • Green leaf lettuce or Romaine leaves
  • Mayonnaise for spreading
  • Optional: 4 slices cheddar provolone, or Swiss cheese
  • Optional: 1 sliced avocado

Instructions
 

  • Preheat grill or grill pan to medium-high. Pat chicken dry, brush with olive oil, and season with salt and pepper. Grill 5–6 minutes per side until internal temp hits 165°F. Let rest 5 minutes, then slice thinly.
  • In a bowl, mix softened butter with minced garlic, dried herbs, and red pepper flakes. Set aside.
  • Spread garlic butter on one side of each bread slice. Toast in a skillet over medium heat, buttered side down, until golden and crispy (2–3 minutes). Remove from heat, toasted side up.
  • Wash and prep lettuce. Slice tomatoes and season lightly.
  • Spread mayonnaise on the untoasted side of each bread slice.
  • Layer lettuce, tomato, grilled chicken, and any optional cheese or avocado. Top with a second bread slice, toasted side facing out.
  • Press gently, slice in half, and serve warm.

Notes

For extra flavor, add sliced avocado or melted cheese to your garlic butter lettuce tomato and grilled chicken sandwich. Want it spicy? Toss in jalapeños or a dash of hot sauce.
