  • 1.5 pounds boneless, skinless chicken thighs
  • 1 large yellow onion roughly chopped
  • 6 cloves garlic minced
  • 1/3 cup extra virgin olive oil

Sauce Components

  • 3 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1 teaspoon ground coriander
  • 3/4 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper optional
  • pinch kosher salt

Instructions
 

Preparation

  • Preheat the oven to 425°F.
  • Pat dry the chicken, season both sides with salt and pepper, and set aside for a few minutes.
  • In a large bowl, combine Dijon mustard, honey, olive oil, minced garlic, spices, and a pinch of salt. Mix well.
  • Coat the chicken in the sauce and transfer to a lightly oiled cast iron skillet. Add chopped onions around the chicken.
  • Bake until internal temperature reaches 165°F, about 25-30 minutes.
  • Remove from oven, garnish with parsley, and serve.

Notes

This dish pairs wonderfully with couscous or a fresh salad. Leftovers can be stored in an airtight container for up to 4 days in the fridge.
For best results, marinate the chicken in the sauce for a few hours or overnight. This enhances flavor and tenderness, making each bite even more delicious.
