Main Ingredients
- 1.5 pounds boneless, skinless chicken thighs
- 1 large yellow onion roughly chopped
- 6 cloves garlic minced
- 1/3 cup extra virgin olive oil
Sauce Components
- 3 teaspoons Dijon mustard
- 2 teaspoons honey
- 1 teaspoon ground coriander
- 3/4 teaspoon paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper optional
- pinch kosher salt
Preparation
Preheat the oven to 425°F.
Pat dry the chicken, season both sides with salt and pepper, and set aside for a few minutes.
In a large bowl, combine Dijon mustard, honey, olive oil, minced garlic, spices, and a pinch of salt. Mix well.
Coat the chicken in the sauce and transfer to a lightly oiled cast iron skillet. Add chopped onions around the chicken.
Bake until internal temperature reaches 165°F, about 25-30 minutes.
Remove from oven, garnish with parsley, and serve.
This dish pairs wonderfully with couscous or a fresh salad. Leftovers can be stored in an airtight container for up to 4 days in the fridge.
For best results, marinate the chicken in the sauce for a few hours or overnight. This enhances flavor and tenderness, making each bite even more delicious.
