- 1 medium zucchini sliced into ½-inch rounds
- 1 red bell pepper seeded, cut into strips
- 1 yellow bell pepper seeded, cut into strips
- 1 red onion cut into wedges
- 8 cherry tomatoes whole
- 1 small eggplant sliced into ½-inch rounds
Marinade:
- ¼ cup olive oil
