Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons maple syrup
  • 1/4 cup salted butter melted

Filling

  • 2 cups full fat cottage cheese at room temperature
  • 1 cup full fat Greek yogurt at room temperature
  • 8 oz cream cheese at room temperature
  • 3 large eggs at room temperature
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoons all-purpose flour
  • 2 teaspoons lemon juice

Instructions
 

Crust

  • Preheat oven to 325°F. Mix graham cracker crumbs, maple syrup, and melted butter. Press into a 9” springform pan and bake for 15 minutes. Cool completely.

Filling

  • Blend cottage cheese, Greek yogurt, cream cheese, eggs, maple syrup, vanilla, flour, and lemon juice until smooth. Pour over cooled crust.
    2 cups full fat cottage cheese, 1 cup full fat Greek yogurt, 8 oz cream cheese, 3 large eggs, 1/2 cup maple syrup, 1 teaspoon vanilla extract, 3 tablespoons all-purpose flour
  • Place the cheesecake in the oven with a steam bath, bake for 50-60 minutes. Let it cool completely for about 4 hours in the fridge.
