Ingredients
  

  • 1 English cucumber halved, seeds removed, sliced thin
  • 8 oz medium pasta penne or rotini
  • 1/2 sweet white onion thinly sliced
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons vinegar
  • Black pepper to taste
  • Cold water for soaking onions

Instructions
 

  • In a small bowl, whisk together sour cream, mayonnaise, sugar, salt, vinegar, dill, and black pepper until smooth. Set aside.
  • Slice the onion thinly and soak in a bowl of cold water to mellow its sharpness.
  • Cook pasta in salted water until al dente. Drain, rinse under cold water, and set aside.
  • Halve cucumber lengthwise, remove seeds with a spoon, and slice thinly.
  • In a large bowl, combine pasta, cucumber, and drained onion.
  • Pour dressing over the salad and toss until evenly coated.
  • Chill for at least 30 minutes before serving for best flavor.

Notes

For the best Healthy Cucumber Pasta Salad, chill it before serving to let the flavors meld. Variation: Swap sour cream for Greek yogurt for a lighter option.
