Cake Ingredients
- 1.33 cups whole wheat pastry flour
- 0.75 teaspoon baking powder
- 0.25 teaspoon baking soda
- 0.25 teaspoon sea salt
- pinch cinnamon
- 2 large eggs at room temperature
- 0.75 cup plain full-fat Greek yogurt
- 2.5 Tablespoons avocado oil
- 0.33 cup pure maple syrup
- 1 teaspoon vanilla extract
Coating Ingredients
- 2 cups dark chocolate chips
- 2 teaspoons coconut oil
- sprinkles if desired
Cake Preparation
In a medium bowl, stir together flour, baking powder, baking soda, salt and cinnamon.
In a large bowl, whisk eggs, Greek yogurt, avocado oil, maple syrup and vanilla until smooth.
Stir in dry ingredients until just combined. Spread batter evenly in the pan. Bake 20–24 minutes, then let cake cool completely.
Forming Pops
Crumble cooled cake into fine crumbs. Mix with yogurt and maple syrup until mixture holds when pressed. Roll into balls and chill.
Dip in Chocolate and Decorate
Melt chocolate with coconut oil. Dip each cake pop into chocolate and allow excess to drip off. Decorate with sprinkles if desired.
These homemade cake pops are customizable with chocolate or candy coatings. They are delicious and healthier than traditional versions.
For best results, ensure your yogurt is thick and your cake is crumbled finely.
