Ingredients
  

Kale

  • 8 cups kale washed and chopped

Dressing

  • 1 tablespoon honey or maple syrup for vegan option
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons olive oil

Instructions
 

Prepare the Kale

  • Remove tough stems and chop the kale. Massage with a pinch of salt for about 2 minutes.
    8 cups kale

Make the Dressing

  • Whisk together the honey, Dijon mustard, lemon juice, and olive oil until smooth.

Combine

  • Combine the kale with the dressing in a large bowl. Toss well to coat.
    8 cups kale
  • Let it sit for 10 minutes before serving for flavors to meld.

Notes

This salad is best served fresh but can be stored in the fridge for up to 3 days. If preparing ahead, keep the dressing separate until ready to eat.
