  • 1/4 cup honey for sweetness
  • 2 teaspoons extra virgin olive oil for coating
  • 1/2 teaspoon kosher salt plus an additional pinch
  • 1/2 teaspoon smoked paprika for flavor
  • 1/8 teaspoon cayenne pepper optional for a spicy version
  • 2 cups raw whole cashews about 10 1/2 ounces
  • 2 teaspoons finely chopped fresh rosemary leaves for garnish

Preparation Steps

  • Place a rack in the center of the oven and preheat to 350°F.
  • In a medium bowl, whisk together honey, oil, paprika, salt, and cayenne.
  • Fold in cashews until evenly coated, then add rosemary.
  • Spread cashews on a baking sheet and bake for 13-18 minutes, tossing every 5 minutes.
  • Remove from oven, sprinkle with salt and toss. Serve warm or at room temperature.
