- 4 bone-in, skin on chicken thighs (or 2 pounds of chicken breasts)
- 1 cup BBQ sauce (your choice)
- ½ cup chicken broth
- 2 tbsp olive oil
- 1 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp chili powder (optional)
- 1 tbsp cornstarch (optional, for thickening sauce)
- Fresh parsley or cilantro for garnish
Turn the Instant Pot to “Sauté” mode and add olive oil.
Season chicken thighs with salt, pepper, garlic powder, onion powder, smoked paprika, and chili powder. Brown chicken on both sides for 2-3 minutes.
Add chicken broth, apple cider vinegar, and BBQ sauce. Stir to combine.
Lock the lid and set the Instant Pot to “Pressure Cook” on high for 10 minutes.
After cooking, let the pressure release naturally for 10 minutes, then turn the valve to release any remaining pressure.
(Optional) For thicker sauce, remove the chicken and switch the Instant Pot to “Sauté.” Stir in cornstarch mixed with water, and cook until thickened.
Serve the chicken with extra BBQ sauce and garnish with parsley or cilantro.
