- 10 oz 1 bag Tostitos Scoops tortilla chips
- 8 oz 1 block cream cheese, softened
- 8 oz shredded mozzarella cheese
- 1 large egg
- 15 oz 1 can sweet corn, drained
- 4 oz 1 can green chiles (mild or medium)
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated Parmesan cheese for topping
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Arrange the tortilla chips on the baking sheet, cup side up.
In a large bowl, mix the cream cheese, shredded mozzarella, egg, sweet corn, green chiles, garlic powder, salt, and pepper until smooth.
Spoon 1 tablespoon of the mixture into each chip cup.
Sprinkle Parmesan cheese on top of each filled chip.
Bake for 13-15 minutes until the cheese is bubbling and golden.
Let cool slightly and serve warm.
For an extra kick, add diced jalapeños to the filling. To make these bites even heartier, consider adding cooked chicken to the mixture for a protein boost.
