Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon caraway seeds

Wet Ingredients

  • 1 egg
  • 3/4 cup plain low fat Greek yogurt
  • 1/4 cup low fat milk
  • 1/4 cup butter melted
  • 1/4 cup canola oil

Mix-Ins

  • 3/4 cup golden raisins
  • 1 tablespoon sugar for sprinkling
  • caraway seeds for sprinkling

Instructions
 

Combine Dry Ingredients

  • In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, salt, baking soda, and caraway seeds.

Combine Wet Ingredients

  • In a separate bowl, beat the egg, yogurt, milk, butter, and oil.

Combine & Bake

  • Slowly add dry ingredients to wet ingredients until moistened. Fold in the raisins.
  • Fill a greased mini muffin tin 3/4 full of batter. Sprinkle with remaining sugar and caraway seeds.
  • Bake at 400° for 15 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 5 minutes before removing from pan to wire rack. Serve warm or at room temperature.
