- 2 tbsp olive oil
- 1 lb ground Italian sausage
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 1 orange bell pepper diced
- 1 green bell pepper diced
- Salt and pepper to taste
- 1 tsp Italian seasoning
- 2 tbsp roasted garlic paste
- ½ cup white wine dry
- 1 can 14.5 oz fire-roasted diced tomatoes, with juice
- 1 tsp dried basil
- 2 tbsp chopped parsley plus more for garnish
- 12 oz egg noodles
- Parmesan cheese for garnish
In a large skillet, heat olive oil over medium heat.
Add sausage and all diced bell peppers. Cook until sausage is browned.
Stir in garlic paste, Italian seasoning, basil, salt, and pepper.
Deglaze pan with white wine, scraping up any browned bits.
Add fire-roasted tomatoes with juice. Simmer 10–15 minutes to reduce.
Meanwhile, cook egg noodles per package instructions. Drain.
Toss cooked noodles into sauce. Mix until well combined.
Serve hot, garnished with parsley and parmesan.
For a creamy twist on Italian Drunken Noodles, stir in a splash of heavy cream before serving. Swap sausage with mushrooms for a veggie version.
