Ingredients
  

  • 2 tbsp olive oil
  • 1 lb ground Italian sausage
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 orange bell pepper diced
  • 1 green bell pepper diced
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 2 tbsp roasted garlic paste
  • ½ cup white wine dry
  • 1 can 14.5 oz fire-roasted diced tomatoes, with juice
  • 1 tsp dried basil
  • 2 tbsp chopped parsley plus more for garnish
  • 12 oz egg noodles
  • Parmesan cheese for garnish

Instructions
 

  • In a large skillet, heat olive oil over medium heat.
  • Add sausage and all diced bell peppers. Cook until sausage is browned.
  • Stir in garlic paste, Italian seasoning, basil, salt, and pepper.
  • Deglaze pan with white wine, scraping up any browned bits.
  • Add fire-roasted tomatoes with juice. Simmer 10–15 minutes to reduce.
  • Meanwhile, cook egg noodles per package instructions. Drain.
  • Toss cooked noodles into sauce. Mix until well combined.
  • Serve hot, garnished with parsley and parmesan.

Notes

For a creamy twist on Italian Drunken Noodles, stir in a splash of heavy cream before serving. Swap sausage with mushrooms for a veggie version.
