- 4 large lemons zested and juiced, seeds removed
- 2 cups granulated sugar
- 1 cup water
- ½ teaspoon vanilla extract optional
Wash and dry the lemons. Zest the peel, then juice them, removing any seeds.
In a medium pot, combine lemon juice, zest, sugar, and water. Stir until sugar dissolves.
Bring mixture to a boil over medium heat, then reduce to a gentle simmer.
