Ingredients
  

  • 4 large lemons zested and juiced, seeds removed
  • 2 cups granulated sugar
  • 1 cup water
  • ½ teaspoon vanilla extract optional

Instructions
 

  • Wash and dry the lemons. Zest the peel, then juice them, removing any seeds.
  • In a medium pot, combine lemon juice, zest, sugar, and water. Stir until sugar dissolves.
  • Bring mixture to a boil over medium heat, then reduce to a gentle simmer.
  • Simmer 30–40 minutes, stirring occasionally, until mixture thickens and turns glossy.
  • Test readiness by placing a spoonful on a cold plate—if it gels, it’s done.
  • Remove from heat and let cool slightly.
  • Pour jam into sterilized jars, seal tightly, and let cool completely.

Notes

For best flavor, use unwaxed lemons when making Italian Lemon Jam. Add a pinch of ginger for a spiced variation or swap vanilla with almond extract for a nutty twist.
