Ingredients
  

Salad Base

  • 4 cups kale chopped and stems removed
  • 1 cup carrots shredded

Dressing

  • 1 cup Greek yogurt plain, unsweetened
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon honey optional, adjust for sweetness
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions
 

Prepare the Ingredients

  • Wash and chop the kale, removing the stems. Place it in a large bowl.

  • Shred the carrots and add them to the kale bowl.

Make the Dressing

  • In a separate bowl, whisk together the Greek yogurt, lemon juice, honey, salt, and pepper until smooth.

Combine and Serve

  • Pour the dressing over the kale and carrots, massaging it into the leaves. Allow to rest for 15 minutes before serving to meld flavors.

Notes

For optimal flavor, let the slaw sit for at least 15 minutes after mixing to allow the dressing to penetrate the kale. You can customize the dressing by adding spices or herbs according to your preference. This slaw can be stored in the fridge for up to 3 days, but it’s best enjoyed fresh.
